(30 ml) fresh lemon juice 1 oz. (30 ml) rich earl grey syrup** 3/4 oz. (22.5 ml) aquafaba (chickpea or white bean water) 2-3 oz. (60-90 ml) Fever Tree Premium Indian Tonic Water Lemon zest for garnish - This is great with a sprig of thyme or lavender too! - if you have it (I did not) **RICH EARL GREY SYRUP 200g strong earl grey tea 400g granulated sugar - Steep 4-6 earl grey tea bags in 200g (~1 cup) boiling water for 10-15 minutes. Remove tea bags and add sugar. Over low heat, stir until sugar is dissolved (don’t boil!). Remove from heat and let cool.
