PEACHES AND CREAM CAKE :
Peaches and Cream Cake
Cake:
1 BOX OF WHITE CAKE MIX
3 OZ. PEACH GELATIN
3/4 CUP OIL
1/2 CUP RESERVED PEACH SYRUP
4 EGGS (ROOM TEMPERATURE)
1/3 CUP OF CHOPPED PEACHES *See note
below
Mix all ingredients and pour into a well-greased ¼ sheet cake pan. Bake 350 degrees for 35-40 minutes or until a toothpick comes out clean and the cake has begun pulling away from the pan's edges. Leave it in the pan and cool it on a cooling rack.
Icing:
1/2 STICK SALTED BUTTER, ROOM TEMP.
4 OZ. CREAM CHEESE, ROOM TEMP.
2 1/2 CUPS POWDERED SUGAR
LEFT-OVER-STRAINED PEACHES
Mix the above ingredients well. Ensure peaches are not too syrupy or the icing will be runny. Ice cooled cake in the pan. You can add more powdered sugar, up to 3 ½ cups if needed.
*Peaches
Use 15 oz. CAN SLICED PEACHES IN SYRUP OR
use 1.5 to 2 cups fresh PEACHES, slice thin and add 1/2 cup sugar. Microwave sugared peaches for 2 minutes, then mash and chill.
Drain the peaches and reserve the syrup for the cake batter. Put the peaches in a chopper and chop them. Use 1/3 cup of chopped peaches in the cake batter.
Strain the remaining peaches WELL for icing.

As Tammy, one of their grandchildren, helped her Granny in the kitchen, she learned the art of cooking. Tammy's mama was also a fantastic cook and baker. Her mother taught her even more about cooking than her granny did. As Tammy grew up and started her own family, she wanted to carry on those traditions.
Tammy began her own cooking show, Collard Valley Cooks. She wanted to teach others how to make homemade meals with fresh ingredients, just like Her Grandmother had taught her.
Through Collard Valley Cooks, Tammy kept her family traditions alive. She used to love and care for every dish, just like Granny would have wanted.
